Portobello burger with mozzarella
Who doesn't love a good hamburger? I know i do! But I also love going meatless and really enjoying those portobello burgers, especially with pesto mayo and mozzarella, so good !! This is a variation on this recipe for grilled portobello mushroom burgers. I marinate and grill the mushrooms and cover them with mozzarella, grilled red onions, roasted peppers, and a simple pesto and mayonnaise sauce. - 2 tablespoon Jarred or homemade pesto
- 2 tablespoon Light mayo
- 4th Portobello mushroom caps
- 2 tablespoon balsamic vinegar
- 1 tablespoon low sodium soy sauce
- 1 tablespoon olive oil
- 1-1 / 2 TL Steak seasoning like Montreal Steak Grill Mates
- 4th thick slices of red onion
- 4th oz fresh mozzarella, thinly cut
- 1 roasted red pepper, jarred or homemade sliced
- 4th low-calorie wholemeal rolls, I used Martin
Combine the mayo and pesto in a small bowl.
In a large bowl, whisk together the vinegar, soy sauce, oil, and Montreal steak seasoning.
Put the mushroom caps in the bowl and toss them with sauce and a spoon to coat them evenly. Let stand for 20 to 30 minutes at room temperature and turn a few times.
Preheat the grill or inner grill pan over medium heat. When it's hot, brush the wire rack with oil or lightly spray the grill pan.
Put the mushrooms on the grill and reserve the marinade for basting. Grill for 5 to 7 minutes on each side or until tender, often brush with marinade.
Cover the mushrooms with cheese in the last minute of cooking.
While the mushrooms are cooking, grill the onions for about 1 minute on each side and grill the buns until toasted.
Finally, distribute the pesto on the rolls, place the grilled portobello mushrooms on the rolls and top with the grilled onions and roasted peppers.
